Description
The Baker Perkins / APV Baker 138-20/PHC/VP Microfilm Vacuum Cooker is a continuous scraped-film confectionery cooker designed for high-boiled and low-boiled products, including hard candy, butterscotch, milk boils and toffee.
The Microfilm scraped-surface technology provides rapid, efficient vacuum cooking with minimal process inversion. Its Size 20 high-speed rotor spreads the syrup into a thin film inside a steam-jacketed bronze tube, making it ideal for milk- and cream-based confectionery while reducing burning and cleaning requirements.
The system includes a 150-liter stainless steel syrup reservoir, inlet filters, and a variable-speed syrup feed pump with adjustable throughput.
