Baker Perkins 138-20 Microfilm Vacuum Cooker
Description
The Baker Perkins / APV Baker 138-20/PHC/VP Microfilm Vacuum Cooker is a continuous scraped-film confectionery cooker designed for high-boiled and low-boiled products, including hard candy, butterscotch, milk boils and toffee.
Its Microfilm swept-surface technology provides rapid cooking with minimal process inversion and efficient vacuum evaporation. The high-speed Size 20 rotor uses hinged blades to continuously wipe the inside of a steam-jacketed bronze cooking tube, spreading the syrup into a thin film for rapid and controlled heat transfer. This design is particularly suitable for milk- and cream-containing confectionery, helping minimize burning and reduce cleaning requirements.
The system includes a 150-liter stainless steel syrup reservoir, inlet filters and an infinitely variable syrup feed pump with manually adjustable throughput.
